Salmon with Cherry Tomatoes and Spinach in light broth

When I was growing up, the closest thing to seafood we had was beer-battered Walleye. Now, that we can take a quick ride down to the coast and pick up fresh seafood, my tastes have expanded. We love to go sit at the bar and just order the seafood appetizers with a nice glass of Chardonnay. Whether your favorite seafood is fish or shellfish, they all can be grilled in your Kettle. Let’s get started!

My wife came up with this Salmon recipe one winter, and we loved it. It’s a combination of Salmon, cherry tomatoes, and spinach in a light broth all in a single pan. The best part is it can be a “weeknight easy” for two or an weekend entertaining special for 12.

It is now one of our favorite seafood recipes for the grill! It is also a great place to start cooking with cast iron pans on your grill as well! Check out our post on how we set up our charcoal when cooking with cast iron pans.

The special ingredient is McCormick Cedar Plank Salmon Seasoning Mix. It includes chili, red peppers, onion, garlic lemon peel, celery, and turmeric. We have seen it in our local Costco. It is available on Amazon here. We tend to use a healthy amount of seasoning on both sides of the Salmon to get a nice char on the fish, adjust to your specific liking.

Ingredients:
  • Salmon
  • Seasoning Mix
  • Fresh Spinach
  • Cherry Tomatoes - Sliced in half
  • Broth - Veggie or Chicken

Instructions

  1. Using a towel pat the salmon pieced dry
  2. Sprinkle each side with the Cedar Plank Salmon Seasoning – pat the seasoning with your hand or spatula. This helps keep the seasoning on the salmon when its flipped in the pan
  3. Add a coating of Olive or Avocado oil to the bottom of your pan, and let the pan warm up on your grill
  4. Once your oil starts to shimmer, add the Salmon. If your salmon still has the skin on, place the skin side down first. The skin will help protect the fish from overcooking.
  5. Watch and wait! This is the hardest part, for me. I tend to want to flip the Salmon every couple of minutes. Watch the sides of your salmon and you will see the color gradually turn a shade of white from the pan surface up. Once the sides are about 70% white flip and start cooking the other side.
  6. Once you flip the Salmon, add the cherry tomatoes stirring occasionally.
  7. After 2-3 minutes add the broth and the Baby Spinach and cover.
  8. Once the Spinach starts to wilt it is time to plate.
  9. Create a bed of cooked spinach and tomatoes on your plates. Place the Salomon on the Spinach and spoon the remaining tomatoes on and some of the broth over the top.
  10. ENJOY!

Notes

Pinky’s Pointer: Add a couple of slices or halves of a lemon to the pan with the fruit surface toward the heat or right on top of your grill and roast. This will give you nice warm lemon juice for your Salmon and they look phenomenal on the plate!
